Ingredients:

Base
1 cup almonds (any nut will work)
1/2 cup of shredded coconut
1/4 teaspoon sea salt
1 cup pitted dates

Stuffed1.5 cups raw cashews, soaked overnight and drained (or a little trick is to soak them in boiling water for 10-15 minutes!)
1/2 cup of whole coconut cream
1/2 cup maple syrup
1/4 cup lemon juice
Zest of 2 lemons
1 teaspoon vanilla extract
1/2 cup blackberries (if frozen, thaw first)

Method1. Add the almonds, coconut, and salt to a blender or food processor and mix well until it becomes a fine crumb. Add dates and continue processing until well combined. It should stick together when pressed, if not add 1 tablespoon of water and mix again. Press into a lined cake pan and put in the freezer.2. For the filling, combine all the ingredients except the berries in a blender and blend until completely smooth. Scoop out a little more than half of the mixture and pour on top of the base. Place in the freezer to set a bit.3. With the remaining mixture, add the berries and blend until smooth. Pour on top of the first layer and freeze until completely set.4. Decorate with the ingredients you want and serve. You can then place it in the fridge for up to 1 week or freeze it for 1 month (thaw before serving). Enjoy!
